Whole Wheat Single Crust
Baking a whole wheat pie crust is a great way to increase whole grains and fiber in your diet, and you probably won’t even miss the usual refined white flour. This recipe for a whole wheat pie crust is for a single crust, so you will want to double the ingredients if making a double crust pie, which would call for a crust or “pie shell” on both the top and bottom. Chicken pot pie and boysenberry pie are examples of double crust pies, whereas pumpkin or sweet potato pie require just a single crust on the bottom only.


Keep Everything Cold
The key ingredient of any great pie crust is, “cold.” Yes, you read that right. Top culinary chefs agree that the butter, water or milk, and all of your equipment, for that matter, should be kept cold in order to produce perfect pies and other pastries. If the dough becomes warm, the gluten is activated too soon, causing shrinkage during the baking process.

Making Things Easier
Working quickly enough to keep everything ice cold while walking back and forth to the refrigerator can be a challenge, which is why preparing your pie crust on a refrigerated worktop with built in refrigerated storage is so much easier, especially when making more than one crust at a time. A large stainless steel worktop cooler will have plenty of room for both the ingredients as well as the preparation tools needed for your favorite pies and pastries. Now let’s get started…

Whole Wheat Pie Crust
Ingredients for single crust:

  • 1 cup whole wheat flour
  • ½ cup all-purpose flour
  • 2 tsp. sugar
  • ½ tsp. salt
  • ½ cup cold, salted butter
  • 6 Tbsp. cold milk


In large mixing bowl, stir together the first three ingredients. Cut in the refrigerated butter using a pastry cutter. Add the cold milk to the bowl, and stir, using a fork. Do not over stir or your crust won’t come out as flaky as it should. Form dough into a ball, kneading it a couple of times in the bowl to incorporate any remaining flour into the mound of dough. Refrigerate until ready to use, and then follow the pie recipe of your choice. A sweet potato pie typically takes about 60 minutes baked at 350 degrees, and this dough does very well at that temperature with no need to cover the edges during baking.
The following is a simple sweet potato pie recipe to make with your whole wheat crust:


Sweet Potato Pie

  • 1-1/2 cups sugar
  • 2 Tbsp. flour
  • 1 can evaporated milk (5 oz.)
  • 1 egg, beaten
  • 1 tsp. vanilla extract
  • 2 cups cooked, mashed sweet potatoes
  • 1 unbaked single pie crust


In a large mixing bowl, combine sugar, flour, milk, egg and vanilla. Stir in the sweet potatoes. Pour into pastry shell. Bake at 350° for 45 minutes to an hour or until a toothpick inserted in the center of the pie comes out clean.


Serves 6-8 people
